By presenting 36 species of fish, shellfish, the author loses us a little in market stall details. These first 85 pages are a little long to go through. We want to get to the heart of the matter.
Fortunately, the rest is worth it. Indeed, the detailed explanation of the basic techniques of preparing and cooking fish with flaking or cooking with salt crust for example, are very well detailed.
The recipes are step-by-step made in very refined photos. The shortest recipes are displayed on a double page while the most complex can take 6 pages. We have not noted any culinary difficulties in these recipes. The choices are simple to make without specific equipment.
