Baking bread on board: dough preparation

Now that you have all the ingredients you need to make your bread on board your boat, we will see how to prepare the dough. Between the preparation time and the fermentation time, it takes about 5 hours! But at sea, we often have time to take care of ourselves

Once all the ingredients are combined, all you have to do is prepare the bread dough: mix the ingredients, leave to rest and we will finish with the baking method. Let's go! Let's go!

1 - Take a bowl of warm water in which you mix the two bags of baker's yeast and brown sugar. The latter accelerates the fermentation process. Let the yeast hydrate for about ten minutes and make sure to eliminate lumps by mixing well.

2 - Pour your preparation into a large bowl and add a teaspoon of salt. Don't forget, it will bring taste to your bread. Then add 500 g of flour and mix well (with a wooden spoon for example) until obtaining a homogeneous sticky dough.

3 - Then knead the dough with your hands until you obtain a consistent, soft, but not sticky dough. Get help from a team member who will add flour as you go. You have to add as long as the dough sticks to your fingers. Count about 100 to 150 g of extra flour for a firm dough.

4 - Once the dough no longer sticks to the fingers, the kneading is not finished. You have to keep kneading it, stretching it, turning it over... Make a ball by pulling the edges inwards to integrate air into your dough. The more it is aired, the more your bread will swell during baking. Continue kneading for 10 minutes.

5 - Clean your bowl and put your dough (ball shape) inside, on the floured bottom. Cover it with a damp cloth and place your preparation in a sheltered corner of the boat. The hotter the better! The temperature should be 24 to 27°.

6 - Let your dough rest (between 1 and 2 h) until it doubles in volume. This time can be even longer if it is cold. When your dough has swollen, start kneading again and let it rest again (another one to two hours). When the dough has risen, repeat the kneading operation one last time.

7 - Install your bread on a baking sheet. You will be able to give it a shape: loaf (ball), stick, crown... Treat yourself, especially if you're with kids! The smaller the balls, the shorter the cooking time. If you do not have baking paper, oil your baking sheet well.

8 - Decorate your bread with a knife (or chisel for the smallest). Make notches and let the bread rest once again under a cloth (only a few minutes, the time of heating the oven).

9 - To obtain a nice, crispy crust, moisten the top of the bread just before baking. You can choose to brush your bread with egg yolk, a little milk or a little flour.
